Blanc du Bois is a shining example and testament to the William Chris way of winemaking: we grow the grape and work with the natural results to produce an enjoyable wine. Changing every year, Blanc du Bois is a grape that is incredibly versatile and allows the William Chris team to decide the wine style and does not hold them to making it the same way for every vintage. Before a style is decided on, they look at how the grapes are growing, how the terroir shows through, and how the grapes are tasting. This specific vintage was picked slightly early and underwent an intense Lees stirring program. It was not filtered until the very end giving it a lot of skin contact, leading to increased aromas, a healthy body, and more aging potential.
A light, creamy straw hue gives notes of fresh white grapefruit on the nose lined with lemon & lime zest. The palate drives lean and focused with a clementine citrus core layered with lemon spritz and hints of fresh green peas at the edges, finishing with grapefruit and lavender oils.
