Granite Hill Vineyards lies 15 miles north of Fredericksburg, Texas in the Bell Mountain AVA. Trebbiano, also known as Ugni Blanc, grows in a one-acre section of Granite Hill Vineyards referred to as the prototype block. When the vineyard was established 22 years ago, the Trebbiano grape stood out as one of the best varietals to plant on this site.
Despite late rains and an early harvest in 2016, the quality of the fruit was excellent. The grapes were hand-picked by the William Chris team bringing our administration, tasting room, and wine club teams into the vineyard for team building and hands-on learning. The harvested grapes were brought into the winery then whole-cluster pressed and fermented in stainless steel. After fermentation, the wine was racked into stainless steel for aging sur lie. While aging in the tank, our winemakers stirred the lees back into suspension with a process known as bâtonnage. This was done bi-weekly for 6 months, giving the wine a bigger mouthfeel on the mid-palate and elevating the flavor profiles.
A pale shade of straw opening with a delicate nose of green apple and slate, the wine brings to the palate Meyer lemon zest, backed by green mango and a return of a subtle apple note with the clean, flinty finish.
