The Enchanté was aged for 11 months and blended post-aging. The Merlot was barreled in 1st and 2nd year Eastern European oak, the Cabernet Sauvignon in 100% new French oak, and the Malbec 100% in 2nd year American Oak.
Shortly after opening up, a rush of sweet cherries, black tea, and rhubarb pie develops on the nose. The oak shows through the fruit up front, bringing a creaminess to the nose that shows through to the palate. The sweetness is derived from the oak and lingers throughout, from bouquet to finish. On the palate there are hints of darker red fruit with some dusty purple mulberry, anise, and bright acidity. Look for this wine to continue aging for the next 5 years, gaining more balance as the acidity melds more cohesively with the fruit. The Enchanté historically has been grown and blended to be enjoyed with food. The creaminess and acidity will balance well paired against lighter proteins with heavier sauces. Enchanté means ‘so pleased to meet you’, or, ‘I am so enamored with your presence’. This wine has a lot of meaning for us at William Chris, being the first wine to be produced under our label and being our flagship wine. This wine has been bottle aged and will drop sediment. We recommend decanting and serving around 58 degree F.
